Cranberry Walnut Bread

Cranberry Walnut Bread
Prep time: 15 minutes Cook time: 55 minutes Serves: 8 servings
Ingredients:
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- ½ cup sugar
- 1 ½ tsp baking powder
- 1 tsp salt
- ½ tsp baking soda
- ¾ cup orange juice
- 2 TBSP grated orange zest
- 1 TSBP canola oil
- 1 egg, beaten (or flax egg)
- 1 ½ cup fresh cranberries, chopped
- ½ cup walnuts, chopped
Directions:
- Preheat oven to 350 F. Lightly coat a 9 x 5-inch loaf pan with nonstick cooking spray or coconut oil.
- In a medium bowl, mix together flours, sugar, baking powder, salt and baking soda.
- Stir in orange juice, orange zest, oil and egg. Mix until blended. Stir in cranberries and nuts. Spread evenly in loaf pan.
- Bake for 55 minutes, or until a fork inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely before eating.
