Baked Peaches n’ Cream
Juicy, sweet and delicious, peaches are unquestionably my favorite stone fruit. They taste like ripe summer sunsets and flower speckled fields. They remind me of annual visits to the local orchard, where my siblings and I would pile peaches into cardboard boxes as we sucked on honey sticks. Peach season is short in PA, only lasting from July to September. Let’s celebrate these summer treasures when we can!
While biting into a fresh peach is a treat in itself, warm, caramelized baked peaches take this fruit to the next level. It pairs perfectly with your favorite ice cream, yogurt, or cream. Breakfast or dessert, the choice is yours!
Baked Peaches n’ Cream
Prep: 5 minutes Cook: 30 Minutes Servings: 6
Ingredients:
- 3 fresh, ripe peaches, halved and pitted
- 2 tablespoons coconut oil
- 2 tablespoons pure maple syrup or honey
- 1 tablespoon light brown sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon kosher salt
Instructions:
- Preheat the oven to 350 degrees F. Lightly grease a 9x9-inch or similar sized baking dish. Arrange peaches flat-side up in the dish.
- In a medium bowl, stir together the coconut oil, maple syrup, brown sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
- Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with your favorite ice cream, greek yogurt, or cream.
